Recipe for Diabetic Friendly Tapas - Avocados Rellenes
My passion for cooking was born out of spending precious time in the kitchen with my Mother. Since she is a diabetic, I have evolved my cooking style to make recipes low in sugar while still providing a delicious and flavorful experience for the pallette.
Avocados Vegeterianos Tapas Recipe (Diabetic)
Below is one of my favorite recipes that is easy to make, delicious and very low in sugar!
2 oz Fresh Chopped pineapple
2 oz Chopped Red Onions
2 oz Chopped Red Peppers
2 oz Cut corn
1 Tablespoon of Fresh Cilantro
5 oz Cold Red Beans without juice
5 oz Cold Garbanzo Beans without juice
5 oz Cold Black Beans without juice
1 Cup of Fresh Orange Juice
¼ Cup of Fresh Lime Juice
½ a Tablespoon of Salt
In a big Bowl stir all ingredients, cut 4 fresh avocados and stuffed them with the mix
This Makes four servings and has an estimated 11 grams of Sugar per serving!!
